Have you met Callebaut Ruby Chocolate (also knows as Callebaut RB1)?
Callebaut Ruby Chocolate, also known as Ruby RBI, is the newest chocolate discovery in 80 years. On September 5th, 2017, at a private event in Shanghai, chocolate manufacturer Barry Callebaut introduced the world to Ruby Chocolate. It is considered the 4th type of chocolate after dark, milk, and white. The name comes from its distinctive pink color which occurs all naturally.
How is Callebaut Ruby made?
According to Barry Callebaut, ruby chocolate is made from “ruby cacao beans”. Those beans are grown in Ecuador, Brazil, and Ivory Coast. How Callebaut makes ruby chocolate is a trade secret. They did share that its unique color and taste are a result of the ruby cocoa beans fermentation process. It is an all-natural product without any added coloring or flavorings.
How does Ruby taste?
How does it taste like? Callebaut describes it as “intense fruitiness and fresh, sour notes”. To me, it tastes like raspberry yogurt with slight tang/ tart notes to it. The tartness comes from the critic acid that’s been added to the chocolate to preserve its color. The texture is very smooth and creamy which falls in between milk and white chocolate.
How can I use Ruby Chocolate?
Use this chocolate like white, milk, or dark chocolate but it’s important to share that its ruby color will fade in many applications (such as mouses and ganache). My favorite way to use Ruby is in simple applications such as adding it to cookies, dipping, and bark. It pairs very well with ingredients such as caramel, citrus fruit, pistachios, red fruits, cashews, pineapples, and green tea.
It’s important to mention that Valrhona Inspirations Raspberry and Strawberry are not comparable to Callebaut RB1. Valrhona Inspirations are vegan and do contain added fruit/nuts.
