Fool Proof  Lemon Bars  (Gluten Free)

In a large bowl, combine the sugar and eggs

Whisk until combined but not frothy. 

Add lemon juice and mix together with a whisk

Transfer to a non-reactive pan and cook until cover the back of a spoon. Strain out any bits of eggs

Poor over the prebaked almond crust and bake until set (12-15 minutes)

Chill for at least 3hrs before cutting them with a sharp knife
