Fool Proof Lemon Curd Recipe

Start by juicing your lemon and reserving some lemon zest

In a large bowl, combine sugar and room temperature butter

When creamed together, add your eggs and lemon juice

Don't worry if your mixture looks curdled - this is totally normal

Transfer mixture to saucepan and over low heat cook until your lemon curd starts to look smooth

The lemon curd is ready when it leaves a path on the back of a spoon.
