A Gluten Free Dutch Baby is made from a simple gluten free batter, which puffs up dramatically in the oven, creating a golden, crispy exterior with a soft and custard-like interior.

Ingredients Needed to make a Gluten Free Dutch Baby

Start by adding the room temperature eggs to a large bowl and whisk them until light and frothy.

Add the room temperature low fat milk, vanilla extract and white sugar. Whisk until all the ingredients are combined. It will be frothy and airy.

Slowly add the dry ingredients to the wet ingredients. Avoid adding all the dry ingredients at once or the starches will start to clump together.

Add around 1 teaspoon of lemon zest to the batter and stir to combine. Allow the batter to rest at room temperature for at least 20 minutes

Heat the cast iron pan in a 425F oven. Add your choice of fat. Once hot, add the gluten free dutch baby batter and bake at 425F until golden brown and puffy.

While the dutch baby is baking, prepare your choice of topping. When the dutch baby is ready, carefully remove from the oven and serve immediately.

Dust the Gluten Free Dutch Baby with powdered sugar, top with fresh fruit or even drizzle it with some real maple syrup for a delicious gluten free breakfast.
