Add the egg yolks to a bowl and add half of the white sugar, the milk, and vanilla extract. Whisk until combined. Add flour and salt and whisk until smooth

Whisk the reserved egg whites with the remaining sugar until medium stiff peaks have formed. Make sure not to overwhip them.

Fold the egg whites into the pancake batter. This will make them light and fluffy

Cook the pancakes on low heat for about 2-3 minutes on the first side, then carefully flip and cook for an additional 1-2 minutes on the second side.

Serve the pancakes with your favorite toppings like fresh fruit and maple syrup. Enjoy!
