Gluten Free Peanut Butter Cookies

These Gluten Free Peanut Butter Cookies are soft and chewy with the perfect sweet and salty balance. An American Classic packed with peanut butter flavor and easy to make.

Peanut Butter

Butter

Gluten Free Flour

Roasted Peanuts

Brown Sugar

Eggs

Baking Powder

Vanilla

White Sugar

Place the salted peanuts in your food processor or blender and pulse them until they resemble very coarse breadcrumbs

Cream the butter and sugar for 3-5 minutes, until light and fluffy. Add peanut butter and cream until fully incorperated.

Mix in the egg and egg yolk.

Mix the dry ingredients at a low speed into the wet ingredients until a dough forms. Lastly, mix in the ground-up peanuts. The dough will be soft.

Using a 2 Tablespoon Cookie Scoop portion out the peanut butter cookie dough and divide between the two sheet trays.

Roll each cookie dough portion into a ball

With a dinner fork make a cross-hatch design (criss-cross) on top of the cookie dough. This will press the cookies down and give them their signature look.

Bake the gluten-free cookies one tray at a time at 350F for 12-14 minutes. The cookies will look pale and underbaked but they will continue to bake while cooling.
