A gluten-free almond shortbread crust topped with a thick, luscious layer of lemon custard and dusted with powdered sugar. They are bright, tart and buttery. And simple to make!

You will need just a handful of ingredients including gluten-free flour, sugar, butter, eggs and of course lemons!

Start with a basic almond shortbread crust and bake it for 14-16 minutes or until set and light golden brown

While the crust is baking, prepare the lemon curd filling. Combine eggs and sugar and whisk to combine.

Add the fresh squeeze lemon juice, whisk together and transfer to a non-reactive sauce pan

Add the butter and lemon zest. Cook the lemon curd for 5-10 minutes until it thickened up and covers the back of a spoon

Pour the filling over the prebaked shortbread crust and bake for 13-15 minutes until set.

Allow the lemon bars to cool compelety before slicing and serving. Dust with powdered sugar if you like
