Gluten-Free Levain Bakery Style Cookies

The ultimate recipe gluten-free levain bakery cookies. Gooey, chocolatey with an overload of three kinds of chocolate and pecans.

Start by creaming butter, boths sugars, and vanilla extract on medium-high speed mix until light and fluffy

Add your room temperature egg and egg yolk and mix until fully incorporated.

Once eggs are fully incorporated add the dry ingredients to your wet ingredients

With the mixer running on low, add the dry ingredients

Add the chocolate chips and toasted, chopped pecans

Mix the nuts and chocolate into the gluten-free cookie dough. It will look very rough

Portion out the cookie dough in 6oz portions and allow to rest for 12hrs
