Recipe Ingredient Notes
Gluten Free Cereal: The key ingredient for making gluten-free fluffernutter rice krispies is gluten free cereal. I use gluten-free crispy rice cereal from Aldi, which is certified gluten-free. However, there are several other brands available at major grocery stores. If you don't have access to gluten-free crispy rice cereal, you can use other certified gluten-free cereals like Chex.
Peanut Butter: I use Creamy Peanut Butter in this recipe. Conventional peanut butter has a creamy texture and consistent flavor, making it easy to mix into the rice krispies. I have not tried this recipe with different kinds of nut butter or seed butter.
Marshmallow Fluff: Marshmallow Fluff is a sweet, spreadable marshmallow creme with a light, airy texture. It's the "fluff" in fluffernutter.
Mini Marshmallows: You can either use regular or vegan mini marshmallows. Be aware that vegan marshmallows tend to hold their shape and may take longer to melt. Marshmallows are naturally gluten-free but please make sure to check the packaging for gluten-free certification.
What is Fluffernutter?
Fluffernutter is a type of sandwich that consists of creamy peanut butter and sweet marshmallow creme, often specifically Marshmallow Fluff, spread between two slices of bread, typically white bread. This iconic treat is especially popular in the northeastern United States. The name "Fluffernutter" combines "Fluff," referring to the Marshmallow Fluff brand of marshmallow creme, and "nutter," from peanut butter.
How to make Fluffernutter Rice Krispie Treats
Gluten Free Fluffernutter Rice Krispie Treats come together in no time but need to set up for at least one hour before slicing.
- Line an 8x8 square pan with parchment paper and lightly spray the paper with some nonstick cooking spray. Make sure to leave a little overhang which makes it easier to remove the Rice Krispie treats from the pan. Set aside.
- Over medium heat, in a large pot, melt unsalted butter and the peanut butter together. I like to use a heavy bottom pot for this.
- Once melted, add the mini marshmallows, vanilla extract, and kosher salt. Cook the mixture over a low heat. Stir with a flexible spatula or wooden spoon until the marshmallows are completely melted. Make sure to scrape the bottom of the pot to make sure the marshmallows don't burn.
- Remove the melted marshmallow mixture from the heat and add the rice krispie cereal. Using a flexible spatula, make sure to coat everything evenly.
- In a microwave-safe bowl nuke the second half of the peanut butter for 10-15 seconds until it's pourable. Pour it over the rice cereal and gently fold into the mixture.
- Top the cereal mixture with a few dollops of marshmallow fluff. Fold the fluff into the cereal making sure there are still some visible pockets of the fluff.
- Transfer the fluffernutter rice krispies to the prepared baking pan. With a spatula press it into the baking dish in an even layer. I recommend spraying the rubber spatula with some nonstick cooking spray to make this easier.
- Allow the peanut butter rice krispie treats to cool for at least one hour before cutting. Otherwise, they will be very messy to slice.
Variations of Fluffernutter Rice Krispie Treats
Add some chocolate chips, peanut butter chips or mini peanut butter cups to the rice krispie treats along with the marshmallow fluff. As they melt, they'll create deliciously gooey pockets of peanut butter throughout the treats. It's a simple way to add extra flavor and texture to this classic treat!
Storage & Freezing
To keep your fluffernutter rice krispie treats fresh, store them in an airtight container to preserve their chewy texture. If stacking them, place sheets of wax paper or parchment paper between layers to prevent sticking. For best results, store at room temperature and enjoy within 2-3 days for the freshest taste.
To freeze rice krispie treats, wrap them individually in plastic wrap, then place them in a freezer-safe bag or container. They can be frozen for up to six weeks. To enjoy, let them thaw at room temperature for about 15-20 minutes. Freezing rice kripies can change their texture and reduce their chewiness.

Note about Salt in my Recipes
I use Diamond Kosher Crystal Salt in all of my recipes unless otherwise stated. If use use a different brand or kind of salt in your kitchen please adjust accordingly since some salts can be saltier. If you use Morton’s Kosher Salt please be aware that their salt granules are smaller in size, denser, and crunchier and twice as salty.
Baking in grams
I share my recipes in grams and by weight since baking by weight is the most accurate way to bake. Digital Scales are very affordable and easy to use. You can purchase them on Amazon for less than a set of measuring cups. For small amounts under 10 grams, I like to use this Precision Pocket Scale. Measuring cups are very inaccurate which can cause significant errors when it comes to gluten-free baking or baking in general. Especially since I bake with gluten-free flours which weigh differently than “regular” flours. I do provide some ingredients like spices and leavening agents in measuring spoons. Note about Ovens and Oven Temperatures
All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.
If you are baking with convection (fan-forced), please adjust the recipes accordingly. Convection oven can cause baked goods to dry out quickly and still be raw inside. Since takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

- 75 grams marshmallow fluff (a few generous spoons)
