Recipe Ingredient Notes
Gluten Free Cereal: The most important ingredient for making gluten-free rice krispies is gluten-free cereal. I use gluten-free crispy rice cereal from Aldi, which is certified gluten-free. But there are several other brands available at major grocery stores. If you don't have access to gluten-free crispy rice cereal, you can use other certified gluten-free cereals like Chex. Although Chex is not a rice cereal, it is also certified gluten-free (except for Wheat Chex) and does not contain any high fructose corn syrup. Its "criss-crossed" shape, like little pillows, makes rice krispie treats less dense and somewhat airy. You can use any flavor of Chex in this recipe, but if you have celiac disease, please be aware that Wheat Chex is NOT gluten-free.
Gluten-Free Marshmallows: You can either use regular or vegan mini marshmallows such as Dandies All Natural Marshmallows here. Vegan marshmallows tend to hold their shape and may take longer to melt. Marshmallows are naturally gluten-free but please make sure to check the packaging for gluten-free certification.
Gluten Free Graham Crackers: Gluten-Free Graham Crackers are widely available these days. There are several brands on the market now like Schar, Pamelas, and Kinnikinnick. My personal favorite are Gluten Free Honeygrams from Schaer. If you can’t find Graham Crackers do not worry. You can use Gluten Free Shortbread cookies such as Schär Gluten Free Shortbread Cookies or Walkers Shortbread Gluten-Free Shortbread Rounds.
Chocolate: Since Hershey Milk Chocolate Bars are the classic ingredient for S'mores, I use their mini bars in my S'mores Rice Krispie Treats. Hershey Milk Chocolate Bars are gluten-free according to Hershey's website. But are not certified gluten-free. Allergens are Soy and Milk. Feel free to use whichever chocolate is compliant with your dietary needs.
Unsalted Butter: To make vegan rice krispie treats, you can use vegan butter in this recipe

How to make Gluten Free S'mores Rice Krispie Treats
You can make this delicious no-bake dessert in no time and it is a fun, simple recipe to make with little ones.
- Line an 8x8 square pan with parchment paper and lightly spray the paper with some nonstick cooking spray. Make sure to leave a little overhang which makes it easier to remove the S'mores Rice Kirspie treats from the pan. Set aside.
- Combine the gluten-free cereal and broken-up graham crackers in a bowl. In a separate bowl measure out 50 grams of mini marshmallows and set aside. Chop the milk chocolate and if you like, place it in the freezer. While testing this recipe I realized the cold chocolate will less likely turn the rice krispie treats don't turn into a chocolatey mess.
- Over medium heat, in a very large pot, melt butter. I like to use a heavy bottom pot for this.

- Once the butter is melted, add the mini marshmallows, vanilla extract, and kosher salt. Stir with a flexible spatula or wooden spoon until the marshmallows are completely melted. Make sure to scrape the bottom of the pot to make sure the marshmallows don't burn.
- Once fully melted, remove the marshmallow mixture from the heat and add the gluten-free cereal and graham crackers. Using a flexible spatula, make sure to coat everything evenly.
- Allow the mixture to sit for a minute before adding the reserved 50 grams of mini marshmallows.

- When the mixture has slightly cooled, fold in the chopped milk chocolate. The chocolate may melt and turn the rice krispies a bit into a mess BUT remember, classic s'mores are a pretty mess to eat.
- Transfer the cereal mixture to the prepared 8x8 pan and with lightly greased hands or a rubber spatula press it into an even layer without packing them down. Top with additional chocolate and graham crackers, and if you like a generous sprinkle of flaky sea salt.
- Allow the gluten-free s'mores rice krispie treats to cool for at least one hour before cutting. If your kitchen is very warm, you can also place them in the fridge to speed to the cooling.
- Once fully cooled, cut the rice krispie treats with a serrated knife into pieces and enjoy!

Storage
Storing gluten free s'mores rice krispie treats properly ensures they remain fresh and delicious for longer. Follow these simple tips to keep your treats at their best:
Place your rice krispie treats in an airtight container to prevent them from drying out. This keeps them soft and chewy. Keep the container at room temperature, away from direct sunlight or heat sources. If you’re stacking the rice krispies treats, place a sheet of parchment paper between each layer to prevent them from sticking together.
For longer storage, you can refrigerate rice krispie treats. Wrap each treat individually in plastic wrap and place them in an airtight container. They can last up to one week in the fridge.
To freeze rice krispie treats, wrap them individually in plastic wrap, then place them in a freezer-safe bag or container. They can be frozen for up to six weeks. To enjoy, let them thaw at room temperature for about 15-20 minutes.

FAQ about Gluten Free S'mores Rice Krispie Treats
Unfortunately, Kellogg's Rice Krispies contain barley malt and are not a safe option for celiacs. There are several brands that do offer gluten-free rice krispie cereal.
Yes! To make this recipe dairy-free, substitute the butter with your favorite vegan butter. I don't recommend using shortening or coconut oil. Since milk chocolate does contain dairy, I recommend using semi-sweet chocolate or dark chocolate chips.

Note about Salt in my Recipes
I use Diamond Kosher Crystal Salt in all of my recipes unless otherwise stated. If use use a different brand or kind of salt in your kitchen please adjust accordingly since some salts can be saltier. If you use Morton’s Kosher Salt please be aware that their salt granules are smaller in size, denser, and crunchier and twice as salty.
Baking in grams
I share my recipes in grams and by weight since baking by weight is the most accurate way to bake. Digital Scales are very affordable and easy to use. You can purchase them on Amazon for less than a set of measuring cups. For small amounts under 10 grams, I like to use this Precision Pocket Scale. Measuring cups are very inaccurate which can cause significant errors when it comes to gluten-free baking or baking in general. Especially since I bake with gluten-free flours which weigh differently than “regular” flours. I do provide some ingredients like spices and leavening agents in measuring spoons. Note about Ovens and Oven Temperatures
All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.
If you are baking with convection (fan-forced), please adjust the recipes accordingly. Convection oven can cause baked goods to dry out quickly and still be raw inside. Since takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.
