Gluten Free Cereal: While traditional rice krispie treats recipes call for puffed rice cereal, like Kellogs Rice Krispies, I use Rice Chex cereal in my recipe for Oreo Rice Krispie Treats. Surprisingly Chex is not only gluten-free but they are also kosher and do not contain any high fructose syrup. Its “crisscrossed” shape, like little pillows, makes rice krispie treats less dense and somewhat airy. You can use any flavor of Chex you like in this recipe. Keep in mind Wheat Chex are NOT gluten-free.
Gluten Free Oreos: Gluten-free Oreo Cookies are widely available in the US. Sadly only the Original Oreo Flavor is available gluten-free. You can also use any other chocolate sandwich cookies instead of Oreos. You may use regular Oreos if you are not on a gluten free diet.
Mini Marshmallows: You can either use regular or vegan mini marshmallows such as Dandies All Natural Marshmallows in this recipe for Gluten-Free Oreo Rice Krispy Treats. Be aware that vegan marshmallows tend to hold their shape and may take longer to melt. Marshmallows are naturally gluten-free but please make sure to check the packaging for gluten-free certification.
Chocolate: I use white chocolate chunks (a chopped-up white chocolate bar) here. You can also use dark chocolate chips or a combo of dark and white. If you use white chocolate chips, I highly recommend Ghiradelli or Guittard White Chocolate Chips.
Unsalted Butter: To make vegan rice krispie treats, you can use vegan butter in this recipe.

How to make Oreo Rice Krispie Treats
Classic Rice Krispie Treats are always a crowd pleaser. It's a given everyone will love these gluten free oreo rice krispies treats. The added Oreos and White Chocolate takes them to the next level. They are the perfect dessert for a cookout, tailgating or party.
Make sure to measure out all your ingredients and prepare the 8×8 square pan before starting.
Step 1: Line an 8×8 inch square pan with parchment paper and lightly spray the paper with some cooking spray. Set aside. You may also skip the parchment paper and generously spray the pan with a non-stick spray instead.
Step 2: Combine the gluten-free cereal and chopped-up Oreo Cookies in a bowl. In a separate bowl measure out 50 grams of miniature marshmallows and the chopped-up white chocolate and reserve for later.

Step 3: Over medium heat, in a very large pot, melt butter. Make sure to use a big enough pot for this.
Step 4: When the butter is melted, add the mini marshmallows, vanilla extract, and kosher salt. At a medium-low heat carefully melt the marshmallows and butter. Make sure to scrape the bottom of the pot to make sure the marshmallows don’t burn.
Step 5: Remove the melted marshmallow mixture from the heat and add the gluten-free cereal and graham oreos. Using a flexible spatula, make sure to coat everything evenly.

Step 6: Allow the mixture to sit for a minute to cool down slightly. Add the reserved 50 grams of mini marshmallows and white chocolate and fold to combine. The white chocolate will melt into the mixture if it is too hot. Unlike my S'mores Rice Krispie treats, this will not affect their look. Make sure not to overmix and crush all the cereal.
Step 7: Transfer the gooey marshmallow cereal mixture to the prepared pan. With lightly greased hands or a greased rubber spatula press it into an even layer without crushing it. Top with additional chopped-up Oreos and chocolate, and if you like a generous sprinkle of flaky sea salt.

Step 8: This step of the recipe may be the hardest one: Allow the gluten free oreo rice krispie treats to cool for at least one hour. If your kitchen is warm and humid, you can speed this up by placing them in the fridge.
Step 9: Once fully cooled, use a serrated knife to cut the oreo rice krispies into 9-12 pieces. Enjoy yout new favorite treat.

How to store Rice Krispie Treats
Store any leftovers in an airtight container or tightly wrap the pan with plastic wrap and store them at room temperature for up to 3 days.
Can you Freeze Rice Krispie Treats?
If you worry about eating the whole pan of homemade rice krispie treats, you can always freeze them. To freeze gluten free rice krispie treats, wrap each square with parchment paper or wax paper and place them in a freezer bag. Freeze for up to 3 months. They may not be as soft as they were when you first made them. But this is a great way to have oreo rice krispie treats on hand when the craving hits.

Rice Krispie Treats are the best when eaten within 2 days of making them.
While dogs can eat regular rice krispie treats made with just cereal and marshmallows, rice krispies made with oreo cookies and chocolate should NOT be shared with your four-legged friend.
Baking in grams
I share my recipes in grams and by weight since baking by weight is the most accurate way to bake. Digital Scales are very affordable and very affordable. You can purchase them on Amazon for less than a set of measuring cups. Measuring cups are very inaccurate and can cause significant errors when it comes to gluten-free baking or baking in general. Especially since I bake with gluten-free flours which weigh differently than “regular” flours. I do provide some ingredients like spices and leavening agents in measuring spoons. Note about Ovens and Oven Temperatures
All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.
If you are baking with convection (fan-forced), please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

Gluten Free Oreo Rice Krispie Treats
- 55 grams unsalted butter
- 283 grams Mini Marshmallows, divided
- 145 grams Rice Chex (See Note)
- 125 grams (12-15) Gluten Free Oreo Sandwich Cookies
- 70 grams white chocolate
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
For finishing
- Additional oreos and chocolate
- flaky sea salt

How to make Gluten Free Oreo Rice Krispie Treats
- Line an 8×8 square pan with parchment paper and lightly spray the paper with some nonstick spray. Set aside.
- Combine the gluten-free cereal and chopped-up Oreos in a bowl. In a separate bowl measure out 50 grams of mini marshmallows and white chocolate and reserve them for later.
- In a large saucepan, over medium heat, melt the butter. Once melted, add the mini marshmallows, vanilla extract, and kosher salt. Stir with a flexible spatula or wooden spoon until completely melted.
- Remove the marshmallow mixture from the heat and add the gluten-free cereal and gluten-free Oreos. Make sure to coat everything evenly.
- Allow the mixture to sit and cool in the pot for one minute to cool down slightly.
- When the mixture has slightly cooled, fold in the reserved marshmallows and chocolate. Make sure not to overmix!
- Transfer the cereal mixture to the prepared 8×8 pan and with lightly greased hands or a rubber spatula press it into an even layer without packing them down.
- Top with additional chocolate and Oreos, and if you like, a generous sprinkle of flaky sea salt.
- Allow the Oreo Rice Krispie treats to cool for at least one hour before cutting. If your kitchen is very warm, you can also place them in the fridge to speed up the cooling.
- Once fully cooled, cut the Rice Krispie treats with a serrated knife into pieces and enjoy!
