The tangy flavor of the yogurt balances the sweetness and helps achieve a thick, pudding-like texture.
Cream Cheese: I use full-fat cream cheese (the one that's sold in blocks). Adding cream cheese to strawberry cheesecake overnight oats gives them a rich, tangy flavor that mimics real cheesecake. It also makes the oats extra creamy and indulgent, turning a simple breakfast into a dessert-like treat.
Strawberries: Fresh and frozen strawberries work here. Keep in mind that frozen strawberries contain more moisture. Therefore make sure to reduce the amount of milk by 2-3 Tablespoons. (If Strawberries aren't your thing, feel free to replace them with raspberries, blueberries or even fresh mango)
Maple Syrup: I love adding a touch of pure maple syrup for sweetness and to balance the flavors in overnight oats. You can also substitute with honey or leave it out if you prefer a less sweet option. (Keep this in mind if you use a strawberry flavored yogurt which tend to be on the sweeter side).
Chia Seeds: Adding chia seeds to overnight oats enhances both texture and nutrition. These tiny seeds absorb liquid, creating a creamy, pudding-like consistency that's both satisfying and indulgent. If you don't have any chia seeds on hand, feel free to replace them with some ground flaxseeds.
Graham Crackers: For the ultimate strawberry cheesecake flavor I garnish my strawberry cheesecake overnight oats with some crumbled up gluten free graham crackers.

How to make Strawberry Cheesecake Overnight Oats
Making Strawberry Overnight Oats is very simple. Feel free to adjust the sweetness as needed with some additional maple syrup or honey if you like. I prefer using a blender to ensure the cream cheese is fully incorporated into the wet ingredients. You can also whisk it with the greek yogurt, vanilla extract and maple syrup until smooth. It's okay if there are a few tiny lumps.
- Start by washing and dicing the strawberries. If you use frozen strawberries there is no need to thaw them but make sure to cut them into smaller pieces AND reduce the amount of milk used by 2-3 tablespoons. The frozen strawberries will release some liquid while thawing.
- Add the softened cream cheese, Greek yogurt, maple syrup, your choice of milk, and approximately 65 grams of the diced strawberries to a blender. (This is about half of the diced strawberries, so there's no need for precise measurement.) Blend until the mixture is smooth and creamy. Incorporating some strawberries into the liquid base intensifies the strawberry flavor throughout the overnight oats.
- In a bowl, combine the gluten-free rolled oats, the remaining diced strawberries, chia seeds, kosher salt, and the zest from one small lemon.
- Pour the blended liquid mixture into the bowl with the dry ingredients. Add a generous squeeze of fresh lemon juice. Stir everything together until well mixed. It may look like there's too much liquid, but don't worry - the oats and chia seeds will absorb it as they soak.
- At this point, you can divide the Gluten Free Strawberry Cheesecake Overnight Oats into smaller bowls or jars (like small mason jars with lids). Alternatively, cover the entire bowl with a lid or plastic wrap and let it soak in the fridge for at least 3 - 4 hours, preferably overnight. I prefer letting the overnight oats soak in one big bowl. Note about Salt in my Recipes
I use Diamond Kosher Crystal Salt in all of my recipes unless otherwise stated. If use use a different brand or kind of salt in your kitchen please adjust accordingly since some salts can be saltier. If you use Morton’s Kosher Salt please be aware that their salt granules are smaller in size, denser, and crunchier and twice as salty.
Baking in grams
I share my recipes in grams and by weight since baking by weight is the most accurate way to bake. Digital Scales are very affordable and easy to use. You can purchase them on Amazon for less than a set of measuring cups. For small amounts under 10 grams, I like to use this Precision Pocket Scale. Measuring cups are very inaccurate which can cause significant errors when it comes to gluten-free baking or baking in general. Especially since I bake with gluten-free flours which weigh differently than “regular” flours. I do provide some ingredients like spices and leavening agents in measuring spoons. Note about Ovens and Oven Temperatures
All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.
If you are baking with convection (fan-forced), please adjust the recipes accordingly. Convection oven can cause baked goods to dry out quickly and still be raw inside. Since takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

- 130 grams of strawberries, washed and green tops removed
- 200 grams milk (dairy or non dairy)
- 80 grams Greek yogurt
- 60 grams cream cheese, at room temperature
- 20 grams maple syrup (adjust for personal preference)
- 1 teaspoon Vanilla Extract
- 120 grams gluten free rolled oats
- 10 grams chia seeds
- ¼ teaspoon kosher salt
- Zest from one small lemon
- Fresh Lemon Juice (about 1 tabelspoon)
For Serving
- Gluten Free Graham Cracker Crumbs
- Additional Strawberries
Instructions
Gluten Free Strawberry Cheesecake Overnight Oats
- Start by washing and dicing your fresh strawberries. If you're using frozen strawberries, there's no need to thaw them first - but make sure to cut them into smaller pieces. Reduce the amount of milk by 2–3 tablespoons, since frozen strawberries will release extra liquid as they thaw.
- In a blender, combine the softened cream cheese, Greek yogurt, maple syrup, your choice of milk, and about half of the diced strawberries (around 65 grams). No need to be exact. Blend until smooth and creamy. Blending some of the strawberries into the base adds more flavor throughout the oats.
- In a mixing bowl, stir together the gluten-free rolled oats, remaining diced strawberries, chia seeds, a pinch of kosher salt, and the zest of one small lemon.
- Pour the strawberry cream mixture over the dry ingredients. Add a generous squeeze of fresh lemon juice, then stir everything together until well combined. It might look like there’s too much liquid at first, but the oats and chia seeds will absorb it as they soak.
- At this point, you can portion your Strawberry Cheesecake Overnight Oats into jars or containers for individual servings. Or, keep it simple and let the mixture soak in one large bowl covered with a lid or plastic wrap. Refrigerate for at least 3–4 hours, preferably overnight.
