Fioreglut is made with gluten-free wheat starch, which is safe for people with Celiac Disease. But NOT recommended for those with a wheat allergy.

What Is Gluten Free Wheat Starch?
Gluten-free wheat starch has been approved by the FDA and is widely used in certified gluten-free products, especially in Europe. Still, many people with Celiac Disease feel hesitant when they see it on an ingredient label - and that’s understandable.
Here’s the scoop: wheat starch is made by washing wheat flour dough (just flour and water) until the gluten separates and sinks, while the starchy part dissolves in water. That starchy liquid is then processed further to remove any remaining traces of gluten. The result? A fine, powdery starch that helps improve the texture of baked goods.
In certified gluten-free wheat starch (also called Codex gluten-free wheat starch), the gluten content must test below 20 parts per million (ppm), which meets the FDA’s standard for gluten-free labeling. I personally have Celiac Disease and have never had an issue eating products made with gluten-free wheat starch - but everyone’s sensitivity is different. It’s always a personal decision.
⚠️ Important: If you have a wheat allergy, you should not consume products containing wheat starch - even if it’s labeled gluten free. And if a product simply lists “wheat starch” without specifying that it's gluten-free or Codex compliant, it likely isn’t safe for those with Celiac.

Pro Tips for Baking with Caputo Fioreglut
- Hydration is key: Fioreglut absorbs a lot of liquid. If your dough looks more like a thick batter than a traditional dough, you’re on the right track.
- Add Milkpowder: Adding just a bit of milk powder can help improve color and encourage better browning, especially in baked goods that otherwise look a little pale. Note that dairy-free milk powders (like coconut) won’t have the same effect.
- Mix longer than usual: Give it 3–5 minutes of mixing to fully hydrate the starches and psyllium fibers. This builds structure and elasticity.
- Rest the dough: Let it sit before shaping or baking so the flour can hydrate completely and the texture improves.
- Use it where it shines: Fioreglut is outstanding for pizza, focaccia, and rustic breads. Skip laminated or very delicate pastries.
